Healthy Banana Peanut Butter Cup Oatmeal

Hey guys! Today I thought I would share with you one of my favorite recipes that I have concocted lately. It may seem a bit weird, but trust me, this is so cozy and delicious and relatively healthy. (No added sugars - unless you're like me and add brown sugar or honey at the end - haha.) It started when I purchased two jars of PB2 - one of original peanut butter and one of the chocolate peanut butter variation. I wanted to try using it in different ways other than just reconstituting it and using it as actual peanut butter in a sandwich or with fruit. So I was making oatmeal one day, and I usually place a half banana in my oatmeal to sweeten it up and add some interest, but I decided to throw in some chocolate PB2 and it was absolutely delicious. It tastes like oatmeal that has bananas and Reese's peanut butter cups in it. Delicious. Healthy Banana Peanut-Butter-Cup Oatmeal

  • 1/2 c oats
  • 1 c water
  • pinch salt
  • 2 tsp PB2 (chocolate or classic) powdered peanut butter
  • 1 very ripe banana

Optional

  • 1 tsp honey or agave nectar
  1. Bring water to a boil in a small saucepan. Add the oats and stir, over medium heat. When cooked according to the oats' directions (differing times depending on steel-cut vs. quick oats), add pieces of banana, the PB2, pinch of salt, and (optionally) honey. Serve.
